Editorial Mandrágora rescued in facsimile editions the 3 first cooking books that were printed in Chile (in 1851, 1865 and 1872) considered bibliographical treasures of Chilean gastronomy. Regarding this first small format cookbook, Esteban Cabezas comments in his foreword. "This is not a book with recipes for today (at least not all). There are flavors that would provoke speeches even in the more experimental of gourmets (such as milk sauces). There are also other proteins, such as capons and pigeons. And a much more leisurely life, for preparing these dishes, and later consume them as well as enjoy them." (Our translation) --P. 6.
