Scarce first edition of this impressive "ready reference" from the founders of the American Brewing Academy, later known as the Wahl-Henius Institute of Fermentology. Both trailblazers in their own right, Wahl and Henius trained a generation of American brewers and brought international prominence to both state-side beer and barley, with Wahl himself provoking violent opposition with his claim of American barley superiority. His claims were vindicated by German scientists and his and the Academy's stature continued their pre-Prohibition rise.

This volume, scarcely found in retail, is impressive in scope and detail, with chapters on brewer's arithmetic, physics and machinery, micro-organisms, bottling, etc. Includes a meticulously researched dictionary and index, which were priorities of the authors. An important work in the development of American Brewing.
