REPRINT of the book that forms part of the project "Historia del Azúcar en México." It contains very important information of not just the gastronomical literature, but customs, culinary techniques, the process of defining Mexican sweets (which include fruits, chocolate, honeys, beverages, besides pastries, candies and breads). The section on "Azúcar, Mujeres y Fiestas" is very well done and has tables listing, fruits, sweets and sweet drinks by regions. This is not a cookbook per se, although there are historical recipes scattered throughout, it is a historical and cultural history of the uses of sugar. Photographs are by one of Mexico's leading contemporary photographers.
