Often lost among the more original (Menon, Massialot) or charming (Le Cuisinier Gascon) cookbooks that preceded it and the post-revolutionary works that followed (Beauvilliers, Careme), the Dictionnaire Portatif marks an interesting, if largely derivative, moment in French cuisine.
